The targumic versions of our verse under consideration do not show much interest in the question of how (or if) to render עִמָּ֖הּ.
MT:
Gen. 3.6 :ותרא האשה כי טוב העץ למאכל וכי תאוה הוא לעינים ונחמד העץ להשכיל ותקח מפריו ותאכל ותתן גם לאישה עמה ויאכל
Onk:
Gen. 3.6 6 וחזת איתתא ארי טב אילנא למיכל וארי אסו הוא לעינין ומרגג אילנא לאסתכלא ביה ונסיבת מאיביה ואכלת ויהבת אף לבעלה עמה ואכל׃
PsJon:
Gen. 3.6 וחמת איתתא ית סמאל מלאך מותא ודחילת וידעת ארום טב אילנא למיכל וארום אסו הוא לנהורא עיינין ומרגג אילנא לאיסתכלא ביה ונסיבת מאיביה ואכלת ויהבת אף לבעלה עימה ואכל
Neof:

So the targumim preserve this aspect of the Hebrew text, but that is no great surprise. What is of potential interest, however, is that they do not do anything more with עמה. (PsJon introduction of “Sammael the angel of death” is interesting. I am not sure what it means yet, but it is interesting. ☺)
As I noted in an update to another post Rashi and Ramban do not comment on Adam being “with” Eve. The midrashim have more to say, but I left those texts in the office, so that will have to wait until later this week. As always, please feel free to comment and offer any suggestions you may have.
